Chicken Meatballs
Ingredients
16oz Ground Chicken
2 Cups Heavy Whipping Cream
0.5 oz Fresh Chopped Basil
0.5 oz Fresh Chopped Cilantro
1 Tablespoon Tony's(for meat)
1 teaspoon Tony’s for sauce
1 Tablespoon Kinder's Salt Pepper Garlic Blend ( https://amzn.to/3HuWf43 )
(or you can use 1/2 tablespoon black pepper and half and tablespoon of garlic powder)
1 Tablespoon Italian Herb Seasoning(green)
1 teaspoon Chili Powder(or if you don't want the spice use paprika)
(2) 1/3 cups of Grated Parmesan Cheese
1 Egg
1/3 cups Italian Bread Crumbs
This recipe can get easily salty so please stick to meat measurements. Once the meatballs are done you can taste one for desired flavor. If you want to add anything else add it to the sauce.
Chop up Basil & Cilantro set aside.
Mix 1 tablespoon of Tony's, Kinders, and Italian Herb Seasoning and set aside
In a large mixing bowl add ground chicken, then add seasoning leaving a bit for sauce, add in chopped herbs leaving a bit for sauce.
Add bread crumbs and one egg. Mix with hands or spoon until incorporated.
The mixture will be sticky and wet.
Before rolling meatballs preheat oven to 425.
Line a baking sheet with parchment paper and roll desired size meatballs. The meatballs will expand when cooking so roll under the desired size you want. I made 14 meatballs with this 16oz(medium size rolled)
Make sure the oven is fully heated before placing meat in. Chicken easily overcook and dry out.
Cook meatballs on 425 for 20-25 mins. If you want to see if done, use a meat thermometer on the largest meatballs and temp should be 160-165.
Remove meatball from oven and place aside while you make sauce.
You can enjoy these meatballs without the sauce!
In a saucepan add 2 cups of heavy whipping cream. The other ⅓ cup of Parmesan Cheese, the leftover seasoning and herbs you placed aside from meat mixture ,1 teaspoon of chili powder and 1 teaspoon Tony’s.
The chili powder will give it a little spice so if you don't want that substitute with paprika.
Mix together and allow to simmer.
Once simmering add in meatballs stir and simmer some more with top on for 5 mins. Stir once to make sure the sauce is not burning. Turn off. Let sit for 5 mins before serving.
Serve over Rice or Mash Potatoes.
